Yellow gentian (Gentiana lutea) is an iconic plant of French high-altitude meadows. Valued for its bitter root with digestive properties, it is also highly sought after for making artisanal liqueurs . But when should it be harvested ? The answer varies depending on the part of the plant being harvested, the climatic conditions, and the desired uses.
Gentian root , used in the production of liqueurs such as De Michellot , is harvested in autumn , generally between September and November , after the summer flowering.
The reserves of active ingredients (gentiopicrin, amarogentin) are at their maximum.
The plant is in vegetative dormancy, which allows it to be pulled out without weakening future shoots.
The moisture in the soil makes it easier to extract the roots.
Although only the roots are used for liqueurs, some medicinal or craft practices may employ the flowers or leaves .
