Harvest and Spirits: Autumn in Your Glass Every autumn, France buzzes with activity. The vineyards are adorned in red and gold, the orchards bend under the weight of fruit, and in the mountains, medicinal plants yield their last treasures before winter. It's harvest season, and for the world of artisanal spirits, it's a foundational moment. Because without a harvest, there's no liqueur, no brandy, no magic in the glass. At De Michellot, autumn is the beating heart of our year. It's when raw materials reach maturity, when macerations begin, when the liqueur maker's savoir-faire fully expresses itself. Let's delve together into this decisive season. Autumn, the Mother Season of Spirits The Harvest Calendar To understand spirits, you must understand the agricultural calendar. Each raw material has its optimal harvest time, and it is by respecting this timing that the best products are obtained: September: start of grape harvests in southern regions. Harvest of plums (mirabelle, damson), early apples, the last aromatic mountain herbs. October: grape harvests in northern regions. Harvest of walnuts, chestnuts, cider apples and pears. Gentian uprooting in the Massif Central. November: end of late harvests. Harvest of the last fruits (cognac, armagnac). Start of distillations by small distillers. Gentian: An Exceptional Harvest The gentian harvest deserves a separate chapter. This perennial plant, which takes 7 to 10 years to reach maturity, grows only at altitude, in the meadows of the Massif Central, the Jura, and the Alps. Its root, which can weigh up to 5 kg, is extracted by hand by gentian uprooters, an ancestral trade passed down from father to son. Uprooting takes place from late September to October, when the plant has accumulated the maximum active principles in its root. The uprooters use a "devil's fork," a two-pronged tool that allows the root to be extracted without breaking it. It is a physical job, performed at altitude, often in difficult climatic conditions. This root is then transported to liqueur makers, including De Michellot, to be transformed into gentian liqueur. The delay between uprooting and maceration is crucial: the shorter it is, the more aromatic and expressive the liqueur will be. The Grape Harvest: From Grape to Spirit The grape harvest is the most visible moment in spirit production. The grapes harvested in autumn will become, after fermentation and distillation, cognac, armagnac, fine de Bourgogne, or marc. But the journey is long: between the harvest and the bottling of a cognac, years, or even decades, can pass. For grape brandies, the quality of the harvest is crucial. Healthy grapes, harvested at optimal maturity, will yield a must rich in aromas that will be found in the final brandy. The grape varieties used for distillation are often different from those for table wine: Ugni Blanc for cognac, Baco for armagnac, for example. From Harvest to Glass: The Journey of a Liqueur Selection of Raw Materials It all starts with selection. At De Michellot, every raw material is chosen with extreme care. Gentian roots are inspected one by one, walnuts are sorted by size and maturity, herbs are checked for their essential oil content. This exacting standard at the source is the sine qua non condition for an exceptional liqueur. The relationship with the harvesters is fundamental. De Michellot has worked with the same suppliers for years, sometimes generations. This loyalty guarantees mutual knowledge of the product and shared quality standards. Maceration: Time as an Ingredient Maceration is the stage where flavors transfer from the raw material to the alcohol. For liqueurs, this stage can last from a few weeks to several months, depending on the product. Patience is a cardinal virtue here: a too-short maceration yields a superficial liqueur; a too-long maceration can extract undesirable bitterness. Gentian, for example, requires a long and controlled maceration to extract all the richness of the root without tipping into excessive bitterness. It's a delicate balance that only experience can master. Blending: The Art of the Liqueur Maker Blending is when the liqueur maker composes their final liqueur by mixing different macerations, distillates, syrups, and alcohols. It is an act of creation comparable to that of a perfumer composing a fragrance or a chef balancing a dish. Each component contributes its note, and the art lies in creating a harmony that surpasses the sum of its parts. Bottling and Resting After blending, some liqueurs benefit from a resting period that allows the different components to meld together. This is an invisible but essential step: a "rested" liqueur presents a creaminess and harmony that the same liqueur bottled immediately does not. The Terroirs of French Spirits The Massif Central: The Kingdom of Gentian The Massif Central is the birthplace of French gentian. The departments of Cantal, Puy-de-Dome, and Aveyron are home to the most beautiful populations of Gentiana lutea, the yellow gentian whose root is used in liqueurs. The high-altitude meadows (800 to 1500 m), with their volcanic soil and harsh climate, give the plant an incomparable aromatic intensity. It is in this terroir that the De Michellot liqueur-making tradition is rooted. Our gentian liqueurs bear the imprint of these wild and majestic landscapes. Charente: The Land of Cognac The Cognac region, with its six crus (Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, Bois Ordinaires), is undoubtedly the most famous spirit-producing terroir in the world. The chalky soil, the oceanic climate, and the centuries-old expertise of cellar masters produce brandies of unparalleled elegance. Normandy: Apples and Calvados Normandy is the land of apples and calvados. Its orchards, with hundreds of varieties of cider apples, provide the raw material for fruity and warming brandies. Calvados from Pays d'Auge, double-distilled like cognac, is considered the finest. Alsace and Lorraine: The Paradise of White Brandies Eastern France is the territory of white brandies: kirsch (cherry), mirabelle, damson plum, raspberry, Williams pear. These unaged brandies express the purity of the fruit with remarkable frankness. Lorraine mirabelle, in particular, is a jewel of French gastronomic heritage. South-West: Armagnac and Plum Gascony is the birthplace of Armagnac, the oldest brandy in France. Distilled in a single pass in the Armagnac still, it offers a more rustic and full-bodied character than cognac. It is a terroir spirit par excellence, intimately linked to Gascon culture and traditions. Autumn in the Glass: The Flavors of the Season Autumnal Notes in Tasting When tasting a spirit made from autumn raw materials, you find the flavors of the season: Undergrowth notes: mushroom, dead leaf, humus. Found in herbal liqueurs and aged brandies. Ripe fruity notes: cooked apple, pear, plum, chestnut. Characteristic of fruity liqueurs and calvados. Spicy notes: cinnamon, nutmeg, clove. Brought by barrel aging or blending. Earthy notes: root, peat, damp earth. The hallmark of gentian. Caramelized notes: honey, caramel, toffee. Present in nut liqueurs and amber brandies. How to Taste "Autumnal" To fully capture the autumnal flavors of a spirit, here are a few tips: Serve at room temperature (16-20 degrees Celsius). Cold masks subtle undergrowth and earthy aromas. Use a tulip glass or a tasting glass that concentrates the aromas. Take your time with the nose: the first few seconds reveal the most volatile notes (fruits, flowers), then come the deeper notes (wood, earth, spices). On the palate, let the spirit settle before judging. The best liqueurs evolve for several seconds, revealing successive layers of flavors. The Autumnal Art of Living Spirits as a Celebration of the Season Tasting an artisanal spirit in autumn is celebrating the harvest season. It is connecting with a terroir, a savoir-faire, a natural cycle. It is taking the time to savor, in a world that sorely lacks it. The De Michellot artisanal liqueurs embody this philosophy: each bottle is a concentrate of autumn, a tribute to the men and women who harvest, transform, and transmit. This autumn, take the time to discover — or rediscover — the liquid treasures of our terroirs. Explore our complete collection and let autumn enter your glass.
