How is cognac made?

Cognac is an exceptional French brandy, produced exclusively in the Cognac region, according to a strict manufacturing process regulated by the AOC (Appellation d'Origine Contrôlée). Its production is based on five major stages, combining tradition, rigor, and expertise.

1. 🍇 The harvest: from grapes to white wine
Cognac is made primarily from the Ugni Blanc grape variety, an acidic, low-sugar grape that is ideal for distillation.
Once harvested, the grapes are pressed and then vinified to produce a dry, acidic, low-alcohol white wine (around 9% vol.), with no added sugar or sulfites.

2. 🔥 Double Charente distillation
The white wine is distilled twice in a copper still, using the traditional method known as “à repasse”:

1st distillation: we obtain a cloudy liquid called “brouillis” (approximately 30% vol.)
2nd distillation: only the "good toast," the heart of the toast, is retained. This is the cognac eau-de-vie, with an alcohol content of 70% vol.
👉 This slow distillation allows the finest aromas to be extracted from the wine.

3. 🛢️ Aging in oak barrels
The brandy is then aged for at least 2 years (VS) in French oak barrels, mainly from Limousin or Tronçais.
During this period, it slowly oxidizes, develops woody, vanilla, fruity notes, and takes on its amber color.

4. 🧪 The assembly
The cellar master blends several eaux-de-vie of different ages and profiles to create a harmonious cognac, faithful to the desired style:

VS: minimum 2 years
VSOP: minimum 4 years
Napoleon/XO: minimum 6 to 10 years
Rare vintages: sometimes more than 30 years old
5. 💧Reduction and bottling
Before bottling, the cognac is gradually reduced to 40% vol. by adding pure water.
It can then be lightly filtered and then bottled.
