What is shōchū?
Shochu (or "shōchū", 焼酎) is a traditional Japanese spirit , usually made from barley, sweet potato, or rice. Unlike sake (made by fermentation), shochu is distilled, giving it a moderate alcohol concentration (between 20 and 25%). It is highly valued in Japan for its lightness, finesse, and digestibility .
